Offer versus Serve, or OVS, is a concept that applies to menu planning and is used for determining reimbursable meals for both the National School Lunch Program and the Summer Food Service Program. OVS lets children decline some of the food offered in a summer food service program lunch or breakfast. Today, we’ll teach you how to use OVS in the Summer Food Service Program.
